I love homemade cupcakes with old fashion vanilla flavoured butter frosting.
Here's the recipe:
Cake
2 cups flour (all-purpose, not self raising)
3 teaspoon baking powder
1/2 teaspoon salt
1/2 cup butter
1 1/4 cups sugar
2 eggs
1 teaspoon vanilla
1 cup milk
Stir dry ingredients together; flour, baking powder, salt. Cream shortening; add sugar gradually, beating between additions. Add eggs one at a time, beating well after each addition. Stir in vanilla. Add dry ingredients alternately with milk, beginning and ending with dry ingredients; blend well. Pour into baking cups about 2/3 full. Bake at 350 degrees F, 20-25 minutes.
Vanilla Butter Frosting
5 1/2 cups powdered sugar
2/3 cup butter, softened
1 teaspoon vanilla
3 tablespoons milk
Beat all ingredients until smooth spreading consistency. If necessary, stir in milk, 1 teaspoon at a time. Color and frost to your liking.
