When a long time work colleague approached me to do a cooking demo, I was excited at the opportunity to share my recipes and get people to eat healthy, simple meals. The event would be the "Fresh Taste of New Zealand at the AEON Food Fair", 21st April to the 4th May 2016. The audience would be shoppers at the AEON Supermarket in Bandar Utama. I was given the task to create a menu for a simple, healthy Lunch and then a Kids' Party Platter. You can get all the recipes from this blog under the Label, "Recipes".
I opt for a Vegetarian Chili dish that would be an easy to prepare one dish meal with all the ingredients you would get at that supermarket. I actually went shopping at the AEON Supermarket in Bandar Utama to get all of my ingredients to show how easy it would be to buy and prepare the meal.
For the vegetables, the carrots and leek are a must, as it provides the sweetness without adding any extra seasoning or stock. The tomatoes, as it disintegrated, would provide the tang and the texture to the chili complementing the sweetness of the carrots. It is up to you which other vegetables you like or are available in the market. This recipe has zucchini; both yellow and green, capsicum; all three colors, egg plant. At the end, a whole can of baked beans is poured in to thicken the chili. Usually it is not necessary to add water at all as all the juices of the vegetables make up the soup. Keep the pot covered as you sweat and simmer the vegetables. Season with salt and pepper to taste. Serve topped with your favorite cheese. Toast slices of baguettes for dipping and to scoop up all the remaining soup as you finish your meal. You won't want to leave any in the bowl.

For the Kids' Party Platter, I wanted to cook something which would be easy for children to eat; delicious and yet easy to hold and opted for Stuffed Pita Pockets and Lollipop Chicken. For the stuffed pita pockets, I had already had prepared the pockets stuffed with chicken breasts and planned to demo cooking the lamb to stuff in the extra pockets on the day. I only managed to serve the ones stuffed with chicken as I was pressed for time since the event started later than scheduled and the crowd couldn't wait to get a taste of the products. I managed to demo the chocolate pudding and in no time all my food samples ran out.

It was an enjoyable experience as I was able to share tips from moms, and other shoppers who came to ask about the food, especially the chili recipe, with some even asking for seconds!
