Fiesta Cake

It's call a Fiesta Cake since the cake is a colorful combination of yellow, pink and green pastel colors with a Vanilla Butter Frosting.


Pastel Marble Cake
  • 1 1/2 cups granulated sugar
  • 1/2 cup butter
  • 1 cup milk
  • 2 eggs
  • 2 1/4 cups flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla
  • Red & green food color
Pre-heat oven at 350 degrees. Grease and line an 9" round pan. Beat all ingredients except food color in a large bowl on medium speed, scraping bowl constantly, until blended about 30 seconds. Beat on high speed, scraping bowl occasionally, 3 minutes. Divide the batter into 3 equal parts and tint 1 part pink, 1 part green whilst leaving 1 part untinted. Drop batter by alternate color into pan. Bake 40 to 45 minutes 'til wooden pick inserted in center comes out clean. Cool 10 minutes, remove from pan to cool completely before putting on frosting.

Vanilla Butter Frosting
  • 5 1/2 cups powdered sugar
  • 2/3 cup butter, softened
  • 1 teaspoon vanilla
  • 3 tablespoon milk
Beat all ingredients until smooth and spreading consistency. If necessary, stir in additional milk, 1 teaspoon at a time. Add tint and decorate according to your creativity and liking.
