Fusilli with Eggplant

I find Fusilli an interesting pasta due to its "corkscrew" shape.  I personally love this pasta as the sauce finds it way in between the spirals making the pasta really flavorful taking up much of the sauce.

I like to add plenty of fresh basil for this recipe.

Here is a vegetarian recipe using the eggplant or aubergine, as some would call it.
