I had the urge for muffins, made from, not cake batter, but a gooey mixture of rich and fruit laden ingredients that would rise to the top, almost overflowing its paper receptacle with hot, molten goodness.
I came upon a several recipes and came up with this delicious recipe that has a mixture of dry ingredients as a base, to be combined with a mixture of rich fruity flavor and spices, topped with more fruit flavor and crunchy texture that provides and caters to what I wanted in every bite; a soft, moist cake, yet biting into fruit, the crunchiness of nuts and the sweetness of caramelised brown sugar on the golden tops of each muffin.
#1 The base: Mix all these dry ingredients together.
For bananas, I use 1 teaspoon vanilla, 1 cup chopped walnuts with 3 mashed ripe bananas.
You can get creative with other fruits.
#3 The crunchy topping: Combine together the following ingredients.
For apples -- 1/2 cup chopped apples, 1/2 cup course brown sugar, some cinnamon, 3 tablespoon flour and cut in 2 tablespoons butter.
For bananas -- 1/2 cup chopped walnuts, 1/2 cup course brown sugar, 1 tablespoon flour and cut in 2 tablespoons butter.
Method:
Combine mixture #1 and #2 together to form a soft, gooey paste, a sticky, not runny consistency, that will stick to a ladle when ladling into the muffin cups. Fill muffin cups until a little over 2/3 full. Top with #3 mixture and bake at 400 degrees F for about 25 minutes and golden brown.
Makes about 15 medium size muffins.
